Abstract

In the last decade, gastronomic tourism has emerged as a new type of rural tourism which aims to meet the demand of a market segment related to food. Food routes have been established, routes where visitors can observe the different stages of production and taste the product that gives rise to the route. These products are supported by a Regulatory Council certifying their quality. This research analyzes the existing food routes in the province of Cordoba, which refer to five key products: olive oil, wine, Iberian ham, mantecado (traditional Christmas sweet made mainly from lard) and anise. The aim is to determine the socioeconomic profile of tourists who demand this type of tourism and the existing supply thereof. The methodology used is based on correlations. The results indicate that the professionalization of the sector is necessary and that this type of tourism can generate additional income to farmers and create employment, especially in times of crisis.
