Pitaya (Hylocereus undatus) is a fruit that has been observed and studied in the last years, it has indications of positive health results, but there is no study about its glycemic impact, and this fruit may or may not be beneficial for people with diabetes. To determine the glycemic index and glycemic load of Pitaya (Hylocereus undatus). The research was experimental, performed by means of determination of glycemic curves. The study was carried out in a Laboratory of Nutrition course at Estácio do Ceará University Center. As inclusion criteria, adult individuals aged 20-59 years, of both sexes, who had no known diseases that interfered with glycemia were included. For the determination of the GI, four tests with each volunteer were necessary, performed in subsequent weeks with the volunteers fasting for 12 hours. The mean area of the three curves obtained in the tests with glucose and the area obtained with the Pitaya curve, to assess the Pitaya GI, which was categorized as low, moderate or high (GI <55, GI 56-69 and GI ≥ 70). CG was calculated by multiplying the IG of the food by the amount of the glycemic carbohydrate or available in the divided portion by 100. In the case of the test, the portion contained 50 grams of glycemic carbohydrate by the protocol established. After the calculation, CG was classified as low, medium or high (≤10, 11 to 19 and ≥20), respectively. Pitaya's Glycemic Index (GI) was low (46) and the Glycemic Load (CG) was high (23). It is noted that the test portion which contained 417g. We can conclude that Pitaya has a low GI and a high CG, due to the portion offered, but in smaller portions, it is a food that is indicated for glycemic control, unfortunately there are not many studies on the subject in humans.
